The color of the carboned part, and the "washed" area from the intake ports where you see bare aluminum. You want the carbon to be a darker brown but not black like mine on those pistons. There is no other way! Then you can take the charts and adjust jetting for different conditions such as temp and elevation. Even then, I wouldn't just take the charts as gospel. Go by the chart, then check plugs and wash again.
